Roasting Garlic

Around Tramp's Camp we like to eat garlic. We use it in many ways - on bread, in stir fry, pasta or just about anything else. I like to roast up a large amount at a time so we can have it ready in the fridge for any meal or appetizer.

Start with a couple pounds of fresh garlic cloves. You can peel your own or buy the fresh peeled cloves. Toss the cloves with olive oil and chopped fresh rosemary.

Spread out the garlic onto baking sheets and don't crowd them too much. Then sprinkle the garlic with kosher salt.

Roast in the oven at 350 degrees for 45 minutes or more until the cloves are lightly browned and soft.

We keep them in the fridge in a glass container - they keep for a really long time and are so tasty and handy, too. I like to mix butter with olive oil and then chop in some of the roasted garlic and spread it on slices of rustic bread and then brown it under the broiler or toast it on the grill.

Oh, I'll have to give this a try. We love garlic in any shape or form. So far pickled garlic was one of our favorites, but this sounds delicious.
