Smoking Pork in the UDS (Ugly Drum Smoker)

This is our UDS - ugly drum smoker. Right now it is the favorite out of all the smokers, grills and BBQs that we have collected over the years.

Yesterday we smoked a pork shoulder with the Mr. Hankey's Crust Butt Rub that we were given for Christmas from our brother-in-law. Yes, it was safe - no arsenic powder in it!

When it hit the proper temperature for doneness we pulled it off to wrap it up.


Before wrapping the pork in foil we brushed it with some juice and Jack Daniel's whiskey. Then we wrapped it up tightly and put it back in the smoker.


This steelhead fillet went on the smoker when we put the wrapped pork back in to continue cooking.

And sadly, that is end of my pictures. I completely forgot to take anymore photos of the rest of the process. But I can tell you what we did and how it turned out.

When the temp on the pork got up over 200 degrees, we pulled it out of the smoker. We wrapped in more foil and then in a couple of thick towels and put in in an ice chest to rest for several hours. After the rest period we took it out and let it vent for a bit before opening it.

It was so moist and tender and smoky. Tramp 1 took the meat off the bone and shredded it with his fingers. Then he mixed it up with our special homemade bbq sauce - it was so good! And then... he took it to work this morning to share with people for lunch today.

Sorry about that, but I had to= many typos, so I am starting over.
What a fun process; I have never tasted or tried anything like this;I am clueless.
We are just starting to hear more about this kind of cooking in these parts. I see now that you can attach a smoker to your BBQ...I know it's not as good as what you prepare. That must melt in your mouth. Have a good week.

Yum! Wish I'd known you were smokin' that pork yesterday. I would have made my way to your place - could of had some delicious food and played with Chucky. Sounds like a perfect day:)
