Okay, it has been one of those days. The weekend started with good intentions. Tramp 1 decided (after I asked him about it...) that he really should go to the office to work on Saturday. He didn't want to for a couple of reasons. One, he worked last weekend and two, he feels guilty. He feels guilty that I am home alone while he works (believe me, I don't mind!) and that it takes time away from our weekends which are usually busy. Funny thing - I also feel guilty - I feel bad that he has to work when I get to have time at home. So yesterday I went to town with him and dropped him off at work. He said he would feel a lot better about going to work if I had things I needed/wanted to do in town while he worked. A trip to town is always an event with a long list so I was more than happy to have time to shop and someone to share the 50 miles round trip drive with.
At my last stop of the day, Cash and Carry - a restaurant supply type store - I found pork butt on sale for $.99 cents a pound. And the sale was ending this weekend. And I was feeling bad for poor Tramp 1 having spent his whole Saturday working (he worked extra hours every day all week, too). He had been wanting to make some pulled pork so I decided to get the pork butt for him as a treat. The smallest package ended up being 15 lbs. and he was pretty excited when I picked him up at the office and told him about it. Last night he was up late cleaning his Traeger pellet grill so it would be ready to go early in the morning. He also made up some special rub and put it on the meat and wrapped it in plastic wrap to sit overnight in the fridge.
What he did not do was set his alarm clock.... He was going to get up around 5:30 - his regular time - and get that meat on early. But he didn't (and I didn't!) and it was 7:00 by the time we got up. Then the meat had to be injected... And he made a blunder and used apple cider vinegar mixed with whiskey instead of just apple cider with the whiskey. I discovered his error when it was too late for the first piece, but did manage to get it right on the second hunk of meat. Then it had to rest for an hour before going on. In the meantime we had breakfast and by the time he got that meat on, it was 10:00 AM. Really, really late for smoking that much pork butt....
It is now almost 5:00 PM and that pork butt is still smoking away. And I am going to whip up something else for dinner... The leftover Shepherd's Pie casserole from two days ago (also made with leftovers...) isn't going to taste anything like juicy, sweet and vinegary pulled pork... I sure do hope this was a lesson learned - yes, for both of us. My mistake to buy the darned butt and also not to police the alarm clock. I was up at 2:00 AM for a couple of hours - I should have just taken care of it then! He might be up pretty late tonight to finish off that pulled pork. He wants to take it to work tomorrow to share with folks. It will be a nice treat for everyone!

I did something similiar with a frozen chicken this weekend. Oops, forgot to get it out to thaw! Oh well, lower the temp and cook it for A LONG TIME! At least this was one of our home grown chickens so I was not AS worried about pathogens. So far so good!

Your chicken cooked low and slow probably turned out very tasty. I think we are going to be in the mood for some poultry here after all this pork!
